Brownie and cherry sauce hidden in laminated croissant dough, crunchy layers, harmonious play of flavors – this is the August Dream, which brought the Three Variegated Cats Bakery first place in the Puff Pastry Walking Cake category at this year’s St. Stephen’s Day Bread Competition. Zoltán Kompár Nezdei, the dreamer of the cake, together with Dávid Márton, the founder of the bakery, presented their creation to Szente Vajk, the ambassador of St. Stephen’s Day.

Elegant and crunchy on the outside, rich and surprising on the inside, the cake called August Dream was created with the aim of creating an innovative, aesthetic, and at the same time easy-to-eat dessert – while paying homage to both Hungarian and French pastry traditions. The unique and exciting cake is the result of lengthy testing and redesign processes, every detail of which was conscious, from the choice of ingredients to the texture of the fillings to the decoration.

The Three Variegated Cats Bakery was founded in 2017 by Dávid Márton, a fellow Hungarian born in France, who, together with the entire team, strives to pass on tradition by combining it with a contemporary approach – whether it is their long-matured, additive-free, sourdough breads, or their croissants, where they are particularly proud of the dough structure and the quality of the flour and butter.

The bakery entered the Szent István Daily Bread Competition for the first time this year, and the success of Augustusztusi Álom confirmed that it is worth experimenting and looking for new ways. “This award is not only a personal success, but also the joint result of the Three Variegated Cats Bakery – a team that works with passion and commitment every day to provide our guests with high-quality, honest and inspiring baked goods,” emphasized Dávid Márton, the bakery’s founder.

The winning cake of the Three Variegated Cats can be tasted for the first time between August 19th and 20th at the Street of Hungarian Flavors, where the public can also get to know the winning creations of this year’s St. Stephen’s Day and Innovative Bread categories.
