This sparkling wine goes well with fish!
Sometimes great ideas arise from necessity. Piero Lugano, an artist-turned-wine-merchant and later winemaker, decided a few years ago to produce sparkling wine from grape varieties grown in the Genoa region. Since there was not enough space in his shop and winery, he put his wine under the sea: conditions are perfect for bottle fermentation down there. The first 6,500 bottles of ‘Abissi’ were sent down in 2008 for a 13-month rest and came back intact.
