Why does UHT milk have a longer shelf life?

Tetra Pak and GfK Hungária did joint research to point out misbeliefs concerning milk. At a press conference on 6 May they revealed that three out of four Hungarian consumers still think UHT milk contains preservatives. Truth is that ultra-high temperature processing sterilises milk without using preservatives.
