What an Anuga!

Between 4 and 8 October 2025 the world’s food industry once again turned its attention to Cologne: at the largest event in Anuga’s history to date, more than 8,000 exhibitors from 110 countries showcased their products on 290,000m² of exhibition space.

The trade show attracted more than 145,000 trade visitors from nearly 200 countries, with foreign participants accounting for 80% of the total.

At this year’s Anuga exhibition, Trade Magazine was represented (from left to right) by Anikó Czégény, Dóra Bátai, and Zsuzsanna Hermann. We’ll be back again in October, two years from now!

Anuga also has a strong presence on digital platforms: this year the event reached over 3 million people, which is 25% more than the number of people who followed the last event on the internet in 2023.

This year’s global gathering will go down in history as the biggest Anuga of all time. Anyone who thinks five days is enough to explore nearly 8,300 exhibitors across 290,000 square meters is mistaken. But it’s always worth a try!

Groundbreaking innovations

The Anuga Taste Innovation Show attracted 608 companies from 53 countries, and the international jury selected 62 innovations from 1,900 entries. The Top 10 groundbreaking innovations are the following: 1. Kern Tec (Austria): 100% apricot kernel butter. This creamy plant-based butter is a natural source of protein with no added sugar. 2. airup GmbH (Germany): air up® Liquid Rainbow variety pack. Each capsule has a different flavour tailored to a different emotional state. 3. AlgMighty (Netherlands): AlgMighty emulsifier and binder. A new, natural and healthy emulsifier made from microalgae. 4.F W Inter Trading CO., Ltd. (Thailand): coconut water-based noodles. Coconut water noodles are an innovative, healthy type of noodle made from 100% coconut water in 15 days. 5. Panfruit Ukraine (Ukraine): crunchy ice cream with blueberries and blackberries. Freeze-dried ice cream with blueberries and blackberries. 6. And Ice P.C. (Greece): Hotly – vegan hot beverage. Hotly is the first frozen product that turns into a premium vegan hot drink in seconds. 7. YÖMilch / DBG Deutsches Biogeschäft GmbH (Germany): blueberry-flavoured collagen yogurt, containing 2 grams of collagen hydrolysate per cup. 8. Meatless B.V. (Netherlands): Meatless Hybrid Fish is made from 30% cod and 70% textured rice flakes. 9. wunderfish GmbH (Germany): OH-MAMI. A flavour enhancer extract made from 100% European seaweed. 10. Neggst Foods GmbH (Germany): Poached Neggst alternative poached egg, completely plant-based and allergen-free.

The presence of start-ups was incredibly diverse—and they boldly advertised their search for investors. Meanwhile, innovation trends haven’t changed much in recent years: anything sustainable, protein-enriched, alternative, or free-from continues to generate excitement.

The ongoing side programs, continuous presentations, and discussions helped understand the reasons behind the trends represented by the exhibitors and their long-term impact

Introducing Korea

Korea was the official partner country at this year’s Anuga: more than 100 exhibitors showed how centuries-old culinary traditions are linked to modern gastronomic trends. Under the motto “Flavour Meets Trends” three iconic elements, the fermented specialties of traditional cuisine – kimchi, ramyeon and the jang trio – were in the spotlight. The organic food section of Anuga 2025 attracted more international interest than ever before, with over 300 exhibitors from 20 countries. This is hardly surprising, given the dynamic growth of the organic market: according to Innova Market Insights, nearly 60% of new products come from Western Europe, while Eastern Europe (+17%) is among the fastest growing regions.

This year’s guest country, Korea, was represented by more than 100 companies. As has long been a noticeable trend at food industry exhibitions, the presence of Asian countries was significant across all product categories here as well.

We could have highlighted many examples of the creative ideas that helped certain companies stand out from among 8,300 exhibitors—eye-catching booth elements, dazzling lights and sparkle, stylish staff, and products that sparked curiosity.

Anuga Chilled & Fresh Food 2025: spotlight on freshness and convenience innovation

Anuga Chilled & Fresh Food, the global trade fair for the chilled and fresh food segment, (which was growing at an annual rate of 3% globally between 2019 and 2023), took place this year with more than 150 exhibitors participating. The event reflected the growing demand for practical products that meet the needs of consumers seeking fresh, high-quality and time-saving options, such as fresh pasta, antipasti, prepared salads, sliced fruit and premium fish and seafood.

 

The separate pavilion dedicated to alternatives promised more than it ultimately delivered: compared to previous years, companies participated with significantly fewer and more modest displays.

As for the global meat and sausage market, it is currently undergoing a transformation: consumers are increasingly looking for premium quality products with transparent origins and animal welfare considerations that meet at least the Farming Form 3 animal husbandry standard, which provides more space and better conditions. There is growing demand for clean label products that contain natural ingredients and communicate their nutritional value, while convenience solutions and international flavours are also more and more popular.

Reflecting shifting trends, companies once again showcased their high-quality meat ingredients and processed products this year—with massive booths, refrigerators, and aging chambers.

Gluten-free oat beer and sous vide duck meat among the hottest Hungarian products

At the collective stand of the Agricultural Marketing Centre (AMC), 34 Hungarian companies introduced themselves at the ANUGA in Cologne.

As always, the Hungarian community stand was once again an essential part of the national pavilions this year—naturally, with thematic sections spread across multiple locations.

Their gluten-free oat products – including granola, muesli and oat beer – were very popular among buyers. There was also considerable interest in convenience products such as sous vide meats, but goose liver, special seed oils, various superfoods, honeys, syrups and high-quality Hungarian paprika also attracted many visitors. Among the products on display was one of last year’s hits at SIAL Paris, Hungarian-made fish chips, but international chains also paid close attention to healthy ready meals.
