He came from far away
László Mihályi has been the biggest ‘innovation’ in Hungarian confectionery in the past few years. His opinion about the profession gives us food for thought. Q: What makes you different from others? A: I have a constant desire for new things, for special things and I am not afraid to face challenges. I learned the trade in Germany and France and only returned 5 years ago. Q: What did you find here? A: The world is miles ahead of us! There were no notable changes in the past decades. Despite Mr Pataki’s efforts the guild does not deal with operative work. Q: What about traditions? A: Classic Hungarian cakes need to be made, but guests are also hungry for new things. Q: We see your way – the cakes in your Váci Street shop are spectacular. What is your advice to colleagues? A: Lifelong learning! An educational reform is inevitable; teachers and student should go abroad to participate in courses and to work. Q: Which world trends appeared in Hungarian confectionery? A: Unique desserts are gaining ground and mini desserts are also increasingly popular. Q: How do you imagine your future? A: For me modern desserts are the real challenge. I would like to build an atelier and teach.
