They filter it
In rich countries of the world more and more bars and restaurants use filtered water, but this practice isn’t common in Hungary yet, in spite of the fact that expensive kitchen machinery can be used longer with filtered water and less waste is produced as there are no PET bottles. In July Budapest restaurant Asador de Pata Negra started using modern water treatment technology, cooking with filtered water and serving magnesium-enriched water in special bottles. //
