Magazine: Yet another coffee product
Say hello to a ‘new’ cooking ingredient: flour made from dried coffee cherries. It has twice as much protein and five times more fibres than wholemeal flour, and it is full of iron and potassium. Coffee flour contains some caffeine as well but much less than we find in brewed coffee. There is only a hint of coffee in the flour’s taste. According to chef James Beard, coffee flour is best if mixed with wheat flour.
