Chicago’s luxury Italian restaurant Moderno made an unusual wine list: one compiled with almost mathematical precision. Six flavour characteristics are indicated on the list and the intensity of each one is evaluated on a 5-degree scale. The owners say guests quickly got used to the new system. They better ‘understand’ the wines they are tasting and can communicate more easily with the sommelier.
