Magazine: Conference at Sirha
The Guild of Hungarian Restaurateurs (MVI) organised a very interesting conference at Sirha Budapest. Roundtable discussions were held in four topics and the first theme of discussion was the problems of vocational education. The second roundtable dealt with the latest catering trends and with the problems of compiling the menu card. In the third discussion participants debated about how important the location of a bar or restaurant is in its success.
The fourth roundtable discussion was about purchasing: those present first talked about the significance of ingredients produced in the gardens of restaurants and purchased from local farmers. In the second part of the discussion László Jakabffy argued that modern solutions need to be used in monitoring how the finances are managed in the kitchen.
