Magazine: At the top of the trade
László Jakabffy was one of the Gundel Károly Award winners this year. After so many interviews about the trade, this time our magazine has tried to find out more about the person.
When asked about his results, Mr Jakabffy told he is most proud of the success of those talented young chefs who have learned the trade from him. He learned the trade from the best masters who taught him discipline. In addition to perseverance and hard work, his success in the trade was facilitated by his mentors, HunguestHotels CEO Miklós Rózsa and Forum Hotel CEO Ákos Niklai. Hard work involves lots of stress and Mr Jakabffy has managed this with the help of music. The chef has always been strict with his staff but treated them as family! László Jakabffy’s favourite fields of his work are restaurant management and protocol. In gastronomy the most important for him is to preserve traditions. He has a great collection of cook books – some of them date back 150 years – which he has been using to revive dishes and ingredients. His favourite ingredient is fish.Related news
