Magazine: The seven lives of coffee
Coffee lovers are well aware why coffee is good and many of them also know that coffee consumption is beneficial. However, fewer people know the coffee plant can give us much more than a cup of drink. One of the recent new discoveries is coffee leaf tea, which has lower caffeine content than coffee and contains lots of antioxidant. Flour is also made from dried coffee cherries. It has twice as much protein and five times more fibres than wholemeal flour, and it is full of iron and potassium. Coffee flour contains some caffeine as well but much less than we find in brewed coffee. There is only a hint of coffee in the flour’s taste. Coffee flour is best if mixed with wheat flour, 10-25 percent can be added when making dough.
