Balázs thinks good ice cream can’t be made from powers and water only. In his view the way to go is getting to know and trying quality ingredients. For instance top quality fruit purées are available now and there are excellent chocolates too! His opinion didn’t change much about health trends either: eating 2-3 scoops of ice cream a day does no harm to anyone. However, ‘free-from’ ice creams aren’t really ice creams, they can even be more harmful than good quality real ice cream.
