We use the rind of lemon to flavour several different types of food but these days many are afraid of the chemicals accumulated in the skins of tropical fruits. Still, in the Unites States they are starting to rediscover the opportunities in using the skin of citrus fruits. In gourmet shops the candied peels of oranges, lemons and grapefruit are sold in exclusive packaging and chefs are also to happy to use them for garnishing food.
