Slowdown and price increase at the same time – this is how the milk market will develop in the summer
The dairy sector is experiencing both international price increases and subdued domestic purchasing volumes. Based on the June development of the producer price of raw milk, export market trends, and retail purchase and consumer prices of dairy products, the market remains volatile, but significant price increases can be observed in most product categories on an annual basis, according to the latest summary of the Market Price Information System (PÁIR) of the Institute of Agricultural Economics (AKI), which was analyzed by Agrárszektor.
Monthly decline, annual price increase
In June 2025, the national average producer price of raw milk in Hungary was 199.3 forints/kilogram. This value is 1% lower than the May price, but 22% higher than the level of the same month of the previous year. The price decrease is not primarily due to the decline in market demand, but rather to the deterioration of the milk content: both the fat and protein content decreased by 0.06 percentage points during the month. The purchase of raw milk in June was 7% lower than in May, but 1% higher than the level in June 2024.
The price of raw milk intended for the export market was 188.83 HUF/kilogram, which is 4% higher than the export price in the previous month and 16% higher than the same period last year. At the same time, the export price is 5% lower than the domestic producer average, while the exported quantity decreased by 24% in June compared to the year before.
Price increase on the world market and in Europe
There is an increase in the price of dairy products not only in Hungary, but also worldwide. According to AKI PÁIR data, the price of whole milk powder (FOB Oceania) increased by 27%, that of cheddar cheese by 10%, that of skimmed milk powder by 7%, and that of bulk butter by 1% compared to the same week in 2024. The producer price of raw milk in the United States increased by 1% in May, while it remained unchanged in the EU and New Zealand.
On the Italian spot market, the price of raw milk increased by a total of €13.75 between weeks 19 and 28 of 2025, then decreased by €0.25 to €68/100 kilograms by week 29. The Dutch spot market price also stagnated after an increase of €8, then decreased by €1 to €52/100 kilograms. Organic milk currently sells for 76.5 euros/100 kilograms in Italy, while the price of 3.6% fat milk from Germany and Austria is 63 euros, skimmed milk is 26.5 euros, and cream is between 350–355 euros/100 kilograms.
