Demand for multifunctional kitchen equipment is growing among professional users. The Merrychef 402S combining the advantages of hot air and micro wave ovens has been developed to meet such demand. Though it might not be a revolutionary innovation, it is definitely an important piece of equipment for restaurants. Economy has been the primary consideration its designers had in mind. Its dimensions (59 x 76 x 59 cm) are only slightly larger than those of a professional micro wave oven, while its average energy consumption is 3 kW. As it can replace a number of different pieces of equipment, it can be kept in a stand-by mode all day long which can result in a substantial saving both in terms of energy and time. It can be used in both separate modes, but the two operating modes can also be combined to cut the time required for the preparation of a dish substantially. The velocity of the airflow can be increased up to 195 km/h, while temperature can be adjusted from 100 to 275 degrees Celsius. The time required for the preparation of dishes can be reduced by up to 90 percent. The sous-vid process is one of the most popular cooking methods currently. Roasting in a vacuum at a low temperature helps to preserve the texture and flavour of ingredients but fails to create a hard layer on the outer surface of meats. However, the Merrychef 402S creates such a layer. It is also completely programmable. There is a user’s guide provided by the manufacturer, but finding the optimal modes of operation takes some experimenting. These settings can be stored in the memory of the MerryChef 402S for later use. There is no need for a ventilation system because it has built in filters. Metallic pots can also be used with the MerryChef 402D.
