A large proportion of Italian restaurateurs have moved up a level, now offering so-called gourmet pizzas in their more fashionable pizzerias – but what makes a pizza gourmet?

“It all starts with the highest quality ingredients, especially flour. Gourmet pizzas are “finished” after baking, with additional premium raw ingredients. All of this is done using state-of-the-art technology. For example the trendy Neapolitan pizza is baked at very high temperatures (420- 450ºC), very quickly, in maximum 1-1.5 minutes”, says Mirjam Kertész, owner of Coninvest //
