Sustainable catering in Hungary: pioneers of the year 2024
In Hungary, sustainability is one of today’s most important challenges, especially in the restaurant and hotel sector, where a significant amount of environmentally polluting waste is generated every year. The example of the Natura Hill Zebegény restaurant shows that environmentally conscious operation is possible: 90% of the fruits and vegetables from their own organic production are used, their entire range of non-alcoholic beverages is made from their own ingredients, and their kitchen is waste-free. They also reuse their seasonal surpluses.
In light of these positive examples, the Dining Guide restaurant guide has launched a new initiative that rewards sustainably operating restaurants. The purpose of the sustainability list and the Sustainable Restaurant of the Year award is to promote the spread of environmentally conscious practices in the Hungarian hospitality industry. The statistics are worrying: 49 million liters of environmentally harmful chemical products are used every year, and 2.9 million kg of plastic packaging material ends up in landfills.
Dining Guide has chosen Bibo The Eco Lifestyle as a professional partner, led by András Juhász, who provides free advice for sustainable operations. Cooperation between restaurants and education play a prominent role, since environmentally conscious changes can only be implemented effectively in this way.
