Frost, cost shock, generational change: the pálinka sector is cornered on several fronts at once
The year 2025 was not simply a weaker season for the pálinka sector: the crop failure due to the spring frost, the increase in raw material and energy costs, and the transformation of consumer habits all at once intensified the long-standing structural problems – this was what Sándor Pásztor, president of the National Association of Kisüsti Pálinkafőzók, told Agrarszektor. The amount of fruit decreased, which meant a narrower supply of raw materials for distilleries, while price sensitivity in the market increased; However, according to him, the quality has not deteriorated in general.
The biggest break is on the demand side
According to professional assessments, the majority of pálinka consumers today are in the 60–70–80 year old age group, while alcohol consumption is generally declining among the younger generations and a health-conscious attitude is strengthening. Some of the 40–50 year olds encountered pálinka at a time when the product was seen more as a “necessity solution” for many. That is why the sector is consciously trying to open up to younger people: the Pálinka National Council’s “Pálinka at the Higher Level” program series started in 2024 and continued in 2025, and in two years pálinka was presented in twenty higher education institutions – according to the president, however, the interest of young people is currently moderate, and the number of people in the profession is stagnant.
Sándor Pásztor also mentioned that with the transformation of the OKJ system, the food-producing pálinka profession has been removed from the previous structure, and pálinka brewing is currently part of fermentation technology training courses along with other beverage production areas. It is not yet clear how many of these will be genuine new pálinka distillers, but there are few young players in the industry.
Illegal sales: competitive disadvantage of several thousand per liter
According to the position presented in the article, illegal sales further distort market conditions. The president distinguished between properly operating private distilleries (equipment under 100 liters, local government registration, NAV notification, annual quantity limit, without sales) and those who sell commercially under the guise of private distilleries. Legal commercial distilleries are burdened by excise tax, VAT, energy and wage costs, while illegal sellers can have a price advantage of up to 5-6 thousand forints per liter – according to legal players, this makes it impossible to compete meaningfully.
Consumption is highly seasonal: January-March is considered the off-season, with traffic picking up before Easter, followed by a second peak at Christmas; in summer, the tourist season brings a more moderate increase. On the cost side, however, there is continuous pressure: in addition to the increase in the price of fruit, the cost of auxiliary materials (such as enzymes, special yeasts), energy and labor is also increasing, which is forced to be followed by the price of the final product – while the customer side is increasingly price-sensitive.
Taste trends: stable classics, growing grape-based items
There are stable points in consumer preferences: peaches continue to be the leader, sour cherries, pears and apples are also in demand. At the same time, in recent years, grape-based pálinkas and pomace have been making inroads, which, according to the opinion cited in the article, can be partly explained by the more stable average yield and more balanced price of grapes.
The president characterized the sector’s prospects with cautious optimism: if there is no further significant spring frost and the colder period has truly restrained pests, the crop prospects may improve. At the same time, the tasks facing the sector do not only depend on the crop: stopping negative trends, stabilizing the market and “re-teaching” pálinka to younger generations remain key issues.
