Péter Váli’s specialty is ready: Buda green sparkling wine aged on brooms for 6 years
The Váli Estate in Badacsonyörs, which is celebrating its 25th anniversary this year and was voted the Most Beautiful Small Estate in Hungary, is delighting wine lovers with a unique and exciting novelty: in a few days, the winery’s first, traditionally produced 2018 vintage Budai Zöld champagne, which was aged on lees for six years, will be on the market. Buda Zöld champagne, made with such a long maturation period and traditional method, has never been produced in Hungary or anywhere else in the world.
A unique champagne from a rare variety
The raw material for the champagne was harvested specifically for champagne production, then aged on lees for many years, and disgorged this spring. The special feature of the traditional method (méthode traditionnelle, méthode champenoise) lies in the fact that the secondary fermentation takes place in a closed bottle, on lees, which gives the champagne its delicate, creamy bubbles and characteristic complex aroma and taste. Although the name “Champagne” applies exclusively to champagnes made in the French Champagne region, the technology is used in many countries around the world and is called by different names. Péter Váli’s latest creation also follows this centuries-old, classic methodology, combining the traditions of the Badacsony wine region and his own winery’s style. The Buda Green variety, which according to records was also found in the Buda vineyards before the phylloxera, is now found on only 6 hectares in the whole world, and this is essentially located on the northern shore of Lake Balaton, where Badacsony is the most important place with 5 hectares.

– said Péter Váli, the winery’s founder and winemaker. He added: the introduction of the unique sparkling wine opens a special chapter in the life of the estate, as the cellar’s philosophy is now being fulfilled in a new form.
Tradition and innovation meet in one bottle
The Buda Green Sparkling Wine, which is now being presented, is one of the highlights of Váli Birtok’s work to date, which is both a tribute to the tradition of Hungarian grape varieties and a brave, innovative step in the world of premium sparkling wines. The 2018 vintage Budai Zöld sparkling wine, made using a traditional method, is uniquely connected to the Badacsony terroir, providing a special gastronomic experience. The new sparkling wine will be available in the coming days on the Váli Birtok webshop, at the cellar and their partners, and at the anniversary events, where those interested can be the first to taste it.
