The secrets of pricing premium pastries
Our article published at the end of June, which discussed the prices and profitability of premium bakeries in Budapest, caused a serious response. In the article, based on the company reports of seven bakeries, we showed that among the Budapest bakeries considered to be the best and tastiest, there are indeed those whose owners make a significant profit.
Among those interested in the topic, the article became extremely divisive, we received an extreme amount of positive and negative feedback. Many would like to supplement, clarify, or confirm the content of the article, or would like to know more about the topic. Based on the comments and feedback, people are concerned about two main questions:
Why does a filled croissant cost 1,500 or even 2,500 forints, when the price of a product with the same name is 200 or 400 forints in discount stores? Budapest’s artisanal baked goods, although they represent the standards of Paris and Copenhagen, show a significant difference compared to the products available in hypermarkets. The background of the high quality is not only the excellent raw materials, but also the preparation process, which requires a lot of time and expertise. Puff pastry, which is one of the most delicate pastas in the world, becomes perfectly crispy and flaky with careful folding, layers of butter and proper baking.
