Nébih warns the food truck sector about the rules
The season has started, the Nébih pedg has collected what the operators of the buffet carts must pay attention to, so that not only the guests, but also the inspectors can leave the counter satisfied – the Pénzcentrum points out.
In general, it is true that food safety must be established and maintained everywhere, regardless of the form of the restaurant. Food trucks must also comply with, for example, the obligation to provide information on allergen information and operate a self-checking system. Detailed information on both topics – among many others – can be found in the Hospitality and Catering Good Hygienic Practice Guide (GHP). In addition to the comprehensive information, Nébih has collected the most important information according to which the buffet carts can be operated safely.
Every food truck must have a so-called with a base location. Additional activities that are not possible during distribution can be carried out here, such as storage, cleaning, disinfecting, filling the water tank, preparation and cleaning the outside and inside of the buffet car. In the case of intermittently operating food trucks, it is worth starting the season by reviewing and modifying the HACCP system as necessary.
