A day in the life of a dim sum chef – Video of the day
At Meatpacking District Chinese spot Buddakan, where chef Ben Zhou oversees a small team of dim sum chefs that create over 30,000 dumplings a week.
Here we will bypass the famous chefs, the oft-interviewed restauranteurs and GMs and try to shine a light on the individuals in the restaurant industry who perform their duties outside of the public eye. Meaning the bread bakers and the flower arrangers, the in-house butchers and meat smokers, the oyster shuckers and charcuterie experts.
