Milk Product advice: new rules apply to Trappist cheese
With the increase in consumer awareness, there is an increasing social demand for high-quality food, as a result of which the Hungarian Food Book (MÉ) may soon be expanded with a new chapter, regulating one of the defining products of the domestic dairy industry, Trappist cheese.
Back in 2019, the Hungarian Food Code Committee, which operates under the control of the Ministry of Agriculture, added the chapter on Trappist cheese to the regulations on dairy products in Volume I of the MÉ. Due to the increased demand of consumers for higher quality dairy products, we consider it important that the requirements for the most popular domestic cheese type, Trappista cheese, are defined not only at the product group level (inoculated, matured, semi-hard cheese), but also at the product level, as it appears in the new regulations. which also covers the ingredients that can be used, the shape and size of the cheese, and the composition criteria.
The Hungarian Food Book will also contain a detailed system of sensory requirements. With the help of this regulation, it is possible to help regain and maintain consumer trust in Trappist cheese. With the new regulation, consumers can receive clear and fair information about the quality and content values through the name. The domestically produced Trappist cheese is traditionally disc-shaped, therefore the block-shaped Trappist cheese – the vast majority of which is imported – will only be marketed in sliced or grated form and as a raw material for multi-ingredient food. 60-65 thousand tons of cheese arrive in Hungary every year.
