Magazine: Taste Tomorrow by Puratos
Puratos has a research programme called Taste Tomorrow, which unveils brand insights for the bakery, confectionery and chocolate industries. In the following you can read about the five main trends they have identified.
1. Holistic health and maximum personalisation
The health trend is unstoppable and demand is growing for ingredients which are not only healthy, but enhance taste too. 63 percent of consumers are looking for food tailored to their individual lifestyle. When it comes to bakery items, nearly two thirds of respondents would like to buy bread adapted to their personal nutritional needs.
2. The conscious consumer
In 2021 consumers are more conscious than ever before about what they eat and how it affects their own health and that of the planet. Today two thirds of consumers want to know where their food comes from and how it is made. The number of consumers buying plant-based foods has doubled to 60 percent.
3. Taste
Despite COVID-19 taste has remained the No.1 priority for consumers. But thanks to increased online shopping and the growing presence of social media, how food looks is rapidly becoming equally important. 59 percent say food that looks good is tasty as well.
4. Ultimate convenience
After years of ‘slow and steady’ growth, weekly online food shopping doubled in just three years, and 17 percent of consumers now order take-out meals online at least once a week. Consumers also expect better communication both in shops and online, so that they can be confident in their buying decisions
5. Premium experience
Physical shops are still a priority for the majority of consumers: 77 percent of shoppers don’t want stores to disappear. In the future they will demand a seamless ‘phygital’ experience, which combines the advantages of both online and offline channels. //
