Eszter Szabó, the Responsible Gastro Hero Foundation’s head of communications told our magazine: more than 100 restaurants joined the Sustainable Restaurant programme in the last 10 years, and there are about 100 other places that contacted them for advice, but finally decided not to earn the certification – although they did take steps to go greener. Recently 10 restaurants have quit the programme or closed for good. This year the certification undergoes complete renewal: a stricter, 3-level system of criteria will be introduced, and the different levels will provide different benefits to those who meet the criteria. The foundation’s view is that some kind of state support will be necessary for steering Hungarian hospitality in the direction of sustainable gastronomy. //

Ákos Bősze, METRO’s HoReCa business development executive told: the METRO Award for Sustainable Gastronomy, and the complex programme that it involves, is the brainchild of METRO Magyarország, but at international level the parent company has already implemented large-scale sustainability-related activities. For instance in 2020 they relaunched the My Sustainable Restaurant campaign, and with it a more than 100-page practical sustainability guide was also published. Soon this will be available in Hungarian translation too. As for the winners of the METRO Award for Sustainable Gastronomy, they were selected in several stages, after visits by the wholesaler’s sales force team, based on partner recommendations and evaluation by the jury panel consisting of HoReCa experts. //
