PacoJet has probably been the greatest innovation in the kitchen technology of recent years. In short, PacoJet is the combination of a high capacity mixer and shredder, with a built in meat grinder and a foam siphon. – In fact, PacoJet is not entirely new, as fourth and fifth generation machines are available, but it has just appeared in Hungarian kitchens – says Attila Bosnyák, project manager of „in Bistro Trade”. It allows us to turn frozen products into a perfect pulp within seconds. It is ideal for making ice creams and sorbét, but can do a lot more, owing to its cutting blades which rotate vertically. The pulp we get can be stored frozen for 90-180 days. The machine can turn this into a creamy pulp again anytime. It can be used for making creams and sauces of constant quality in the long run. – PacoJet offers many other possibilities as well – agrees Zoltán Danó, chef of Kogart. It can be used for processing perishable spices into gravies and sauces. Of course, creativity is needed by the chef. The majority of users focus on making sweets. The price of the machine is generally regarded as high, but this is not necessarily true if we take into consideration the number of other machines it can replace.
